Healthy Two-Ingredient “Dole Whip” Recipe

One of the reasons that a certain amusement park is called The Happiest Place on Earth is because it sells that legendary Dole Whip, a sugar-coma-inducing frozen soft serve dessert. Unfortunately, the parks are a long hike after Legs Day, and to make matters worse, this cult classic frozen dessert doesn’t have any real pineapple in it. So, here’s an easy, healthier dupe that only takes two main ingredients –  and is sugar-free and vegan. It’s a treat that’s not a cheat, and best of all, no long lines, unless you buy your ingredients at Trader Joe’s on a Sunday. (By the way, you’ll need a pastry bag to make it look like our picture. Sometimes we like to get fancy.)

INGREDIENTS

3 cups of frozen pineapple
1 can of full fat coconut milk
*OPTIONAL – 2 tablespoons of honey or 1 packet of stevia

INSTRUCTIONS

1. Store coconut milk in fridge overnight, so it gets nice and cold. When opening the can, you’ll notice that all the cream rises to the top and forms a solid mass. Scoop out all the solid coconut cream and any coconut milk liquid until you measure out about one cup’s worth. *Make sure you reserve the rest of the coconut milk in the can in case you want to add a little more while blending.

2. Measure three cups of frozen pineapple. If using Trader Joe’s brand, one whole bag measures about three cups.

3. Throw everything into a high-powered blender or food processor and blend until smooth, like soft serve. Since the frozen pineapple chunks are hard as little pellets, you will have to stop the blender to scrape down the sides and break up any big frozen chunks periodically. You can add a little extra coconut milk for a smoother texture.

4. Once you get the desired consistency, scoop and serve! If you are feeling the froufrou, you can pour the mixture into a piping bag or ziplock bag with a frosting tip attached to get a swirly, soft serve effect.
